Mix the following until well incorporated:
1 stick butter, softened
3 oz cream cheese, softened
1 c. flour
Roll flat and place round brie in the middle of the dough. Wrap the dough around the brie making sure not to leave any perforations. Bake at 350 for 20 minutes (or until dough is golden brown). Let sit for 10 minutes before serving. Serve with crackers.

Pecan-topped Sweet Potatoes by Nicole
3 c. cooked, mashed sweet potatoes (I use yams and usually closer to 3 1/2 c.)
1/4 c. butter, melted
1 c. sugar
2 eggs, well beaten
1 tsp. vanilla
1/3 c. evaporated milk
Mix well and put in a 2-quart cassarole dish or 9x13 pan.
Combine the following:
1/2 c. brown sugar
1/4 c. flour
1/2 c. chopped pecans (I do a little less than 1/2 c.)
2 1/2 TB butter, melted
Sprinkle on top of sweet potato mixture. Bake uncovered at 350 for 25-30 minutes or until top is crispy.

Double Layer Pumpkin Cheesecake by Amber McQueen
1/2 cup white sugar
1/2 tsp vanilla
2 eggs
1- 9" graham cracker crust
1/2 cup pumpkin puree
1/2 tsp cinnamon
1 pinch cloves
1 pinch nutmeg
1/2 cup whipped topping
Preheat oven to 325 degrees. In a Large bowl, combine cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Remove 1 cup batter and spread into the bottom of crust; set aside. Add pumpkin and spices to remaining batter. Stir gently until well blended. Carefully spread over batter in crust. Bake 35-40 minutes or until center is almost set. Allow to cool. Refrigerate over night. Cover with cool whip. Delicious!

Brown Sugar Apple Dip
1 8oz. brick cream cheese
1 1/2 C. dark brown sugar
1/4 tsp. salt
1 tsp. vanilla
With an electric mixer, whip ingredients until smooth and fluffy and sugar is mostly dissolved. Cover and store in refrigerator until serving.
Sugar granules will dissolve even more as dip is allowed to sit.

24 Reese's peanut butter cups
1 egg
Unwrap the PB cups and toss in the food processor. Mix them until it turns in to a big gloppy mess, then add the egg and continue to process.
Scoop onto an ungreased cookie sheet, smash slightly. You can add a sprinkle of sea salt for that extra kick if you want. Bake at 350 for 6-10 minutes depending on the size of the cookie.
Rice Pilaf by Nicole Ward
2 c. rice (I like short grained Japanese rice, like Nishiki, Botan, or Calrose)
2 c. vermicelli noodles (broken into pieces)
1/2 c. (1 cube) butter (I cut into cubes)
5 cubes chicken boullion plus 4 1/2 - 5 c. water (or 4 1/2 - 5 c. chicken broth)
salt to taste
put everything in a rice cooker.
stir.
push "on".
stir again when it's done.
Roasted Cauliflower by Chelsie Pedersen
1 large head cauliflower, separated into florets
3 TB olive oil
1-2 TB minced garlic
1/3 c. parmesan cheese
1 TB parlsey
Preheat oven to 450 and grease a large casserole pan. Place olive oil and garlic in a large bowl and mix with cauliflower. Season with salt and pepper. Bake fo 25 minutes, stirring halfway through. Top with parmesen cheese and parsely and broil for 3-5 minutes, or until golden brown.

Crispy Rice Cereal Balls
1 c. peanut butter
1 c. confectioners' sugar
1 c. crisp rice cereal
3 TB melted butter
1 c. semisweet chocolate chips
1 TB butter (or shortening)
Mix together peanut butter, confectioners' sugar, crispy rice cereal, and melted butter.
Roll into balls and place in wax paper until all mixture is used.
Melt chocolate chips and buter toether. Dip balls into mixture, set on wax paper again and let harden.
Tender Pork Chops with Carmelized Apples and Onions by McKenzi's friend
4 bone-in pork loin chops (at least 1/2 inch thick)
2-3 granny smith apples, peeled and sliced about 1/4-inch thick
1-2 yellow onions, sliced
1/3 c. brown sugar
kosher salt and freshly ground black pepper
Preheat the oven to 325 degrees. Lightly grease a 9x13 baking dish. Place the onion slices in an even layer over the bottom of the dish. Top the onion slices with the apples. Sprinkle the brown sugar evenly over the apples and onions. Season the pork chops generously on both sides with salt and pepper. Arrange the pork chops in a single layer on top of the apples and onions. Cover the dish tightly with foil (double foil layer) and bake for 3 hours (no peeking!)

1 cup shortning or butter
1 cup brown sugar
1 egg
2 cups flour
1 tsp. vanilla
1 cup choc. chips
Cream all ingredients except for the chocolate chips. Spread on to jelly roll pan. You may need to spray your spatula (or hands) with non-stick cooking spray. Bake 15 min. at 350 degrees. When removed from the oven, sprinkle chocolate chips on top of cookie. Let stand until they are mostly melted. Then spread the chocolate chips until smooth. Sprinkle with nuts if desired. Cut these cookies while warm. So easy and yummy!
