Can't seem to increase difficulty?
I wanted to up it to, say, five, but every time I do that and then check in a level, it just seems to be stuck on the default value.

Same here. I can set it to 10, create a new profile, verify it's still 10, but when I go into a level it's stuck at 1 again.

Yeah I noticed this too. Always seems to reset back to default. Perhaps an issue withe most recent patch?

I tried resetting levels in a mod and in the demo level and it didn't work either.

I think this should be fixed on the beta branch, please can you give it a try and let us know if the fix works for you.

It seems like it doesn't automatically go back down to 1 anymore when I'm in a level. I'm unsure what difficulty affects, though!
