Today, I made 🇹🇭 Larb Moo (Thai Pork Larb) using frozen meatballs—my own easy “Almonde” version!❗️

I’ll also explain the difference between Larb Moo and Pad Kra Pao, two popular Thai dishes that are often confused with each other.‼️

What’s the difference between
Larb Moo and Pad Kra Pao?
Both are Thai dishes traditionally made with ground pork, but they’re prepared and seasoned quite differently.
🌿 Larb Moo
Larb Moo is a tossed, spicy and tangy herb salad.
The ingredients are mixed together rather than stir-fried, creating a refreshing combination of lime, herbs, chili, fish sauce, and toasted rice powder.

🌿 Pad Kra Pao
Pad Kra Pao is a stir-fried, savory-sweet and spicy pork dish made with Thai holy basil.
In short:
Larb Moo = tossed, tangy & spicy herb salad
Pad Kra Pao = stir-fried, savory-sweet basil pork

My “Almonde” Version
“Almonde” means making a dish using ingredients you already have at home.
【Ingredients】
Frozen meatballs

Other ingredients

My substitutions (“Almonde” version):
Ground pork → Frozen meatballs
Red onion → Myoga ginger
Cucumber → Pea shoots (toumyo)
Lime juice → 1 tbsp lemon juice
Sugar → 1 tsp brown cane sugar
Mint → Shiso leaves
Cabbage → Lettuce
Sticky rice → Low-Cut Brown Rice
The correct ingredients according to the original recipe
1 tbsp uncooked rice
1 tbsp fish sauce
1 tsp ground chili
Green onion
Not needed because I used seasoned meatballs:
Salt & pepper
Vegetable oil
【Directions】
① Toast and crush the uncooked rice
Toast the uncooked rice, then crush it coarsely with a rolling pin.

💡 Tip: Wrap the rolling pin in plastic wrap before crushing the rice. It makes cleanup much easier!

② Microwave and crush the meatballs
Microwave the frozen meatballs until heated through, then crush them with a rolling pin.

💡 Tip: Again, wrapping the rolling pin in plastic wrap helps reduce the amount of washing up!

③ Mix the ingredients
Place the crushed meatballs in a bowl.
Add the fish sauce, lemon juice, ground chili, and brown cane sugar, then mix well.

④ Add the vegetables and toasted rice
Add the pea shoots, myoga ginger, green onion, and toasted crushed rice, then toss everything together lightly.

And it’s ready!

🎊 Plate and serve!🎉
I served it with:
Lettuce, shiso leaves, lemon, and Low-Cut Brown Rice.

Apparently, the authentic way to enjoy Larb Moo is to wrap it in the fresh vegetables served alongside it, or eat it together with sticky rice (Khao Niao).
